This orzo is a wonderful meal to make as a side dish or a great dish to share with friends!
Mediterranean Orzo Salad [Vegan]
Ingredients
- 1 cup orzo pasta
- 7 oz marinated artichoke hearts halved
- 1 cup English cucumber diced
- 1 pint grape tomatoes halved
- 1/2 cup kalamata olives pitted and halved
- 1/3 cup vegan feta cheese crumbled
- 1/3 cup red onion diced
- 1/2 cup vegan Greek dressing or to taste
- parsley for garnish
Preparation
- Cook the orzo according to the package and add to a large mixing bowl
- Next, add the veggies to the mixing bowl and toss until well combined
- Toss with vegan Greek dressing
- Top with vegan feta crumbles and serve warm or cold
